If you love the smoky flavor of BBQ, the savory taste of chicken, and the flavor burst of bacon, then BBQ Chicken Bacon Pizza is the perfect homemade pizza for you. This delicious pizza is a fantastic blend of these flavors, all brought together on a perfectly baked potato flake sourdough crust. Whether you’re hosting a pizza night, having a family dinner, or just craving something special, this is sure to become a new favorite pizza recipe!
You’ll need to start with a crust! You can choose any recipe or store bought crust you would like. However, I use my recipe for a homemade potato flake sourdough pizza crust. It is simply delicious and it uses the wild yeast instead of commercial yeast to rise the dough, which makes it much easier to digest. No matter what, the flavor of this pizza will be amazing regardless.
Here is the easy pizza dough recipe using the potato flake sourdough starter.
Tools you will need:
Skillet (cast iron skillet or non-stick)
Pizza stone (sheet pan can work if you don’t have a pizza stone)
Pizza cutter
Knife
Cutting board
Cheese grater (if shredding fresh mozzarella cheese)
Pizza peel (optional, but very useful)
Pizza Topping Ingredients:
BBQ sauce: I like to use my homemade BBQ sauce but you can use your favorite brand. You could even try a spicy BBQ sauce if you want some extra heat! Just make sure you love the flavor, because it is a barbecue chicken pizza after all, the BBQ sauce needs to be good!
Cooked chicken: This can be baked chicken breast, diced rotisserie chicken, left over shredded chicken, or even canned chicken.
Bacon: Cooked and crumbled into bit size pieces. Make crisp bacon without a mess by baking it in the oven on a baking sheet. This can be done ahead of time and frozen for using later.
Shredded mozzarella cheese: It’s best to buy a block of mozzarella cheese because it will melt better, but I have used pre-shredded mozzarella cheese before and it turns out fine as well.
Shredded cheddar cheese: Same goes for the cheddar cheese. It will melt better if it’s freshly shredded from a block, but we don’t always have time for that!
Red onion: You will need to thinly slice the red onion.
Olive oil or butter for brushing the crust: This is optional, but can be a way to add flavor, especially if you add in some garlic powder before brushing it on the crust.
Instructions for making BBQ Chicken Bacon Pizza:
Prepare the Dough
Follow the directions of the pizza dough you have chosen.
Preheat the Oven: Preheat your oven to 450°F. If you have a pizza stone, place it in the oven to heat up as well.
Prepare the Toppings
Cook the Chicken: If your chicken isn’t already cooked, cook the chicken. Choose your preferred method of cooking. This is also a great recipe for using up leftover rotisserie chicken, or chicken from another meal.
Cook the Bacon: Cook the bacon in a skillet over medium heat until crispy. Alternatively, as mentioned above make perfectly crispy bacon by baking in the oven. Transfer to a paper towel-lined plate to drain, then crumble into pieces.
Caramelize the Red Onion: My little secret to making the best caramelized onions is by cooking it in bacon fat. Using some reserved bacon grease from cooking the bacon, saute the red onion in a skillet until fragrant and caramelized.
Add Sauce to the Chicken: Once the chicken is cooked, shred or dice it into bite-sized pieces. Toss in your choice of BBQ sauce.
Assemble the Pizza
Cook the Dough: Place dough in the oven to parr bake according to your doughs directions.
Add the Toppings: Place a layer of about 1 cup of mozzarella cheese on the pizza crust. Evenly distribute the BBQ chicken, crumbled bacon, and red onion over the mozzarella cheese.Sprinkle the rest of the mozzarella cheese and cheddar cheese on top.
Add the Sauce: Drizzle a generous amount of BBQ sauce over the pizza and swirling type pattern.
Brush the Crust: Lightly brush the exposed edges of the crust with olive oil for a golden-brown finish.
Bake the Pizza
Transfer to the Oven: Carefully transfer the assembled pizza using a pizza peel to the preheated oven (or onto the hot pizza stone).
Bake: Bake pizza for 10-12 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
Serve: Remove the pizza from the oven and let it cool for a few minutes. Slice, and serve.

Storing Leftover Pizza:
If you happen to have leftover pizza, allow it to cool completely and store in an airtight container in the refrigerator. Reheat the pizza by preheating the oven and pizza stone to 350F. Once heated, place the leftover pizza on the pizza stone and bake until heated through. Alternatively, you could reheat in a toaster oven or even a microwave, but the results will not be near as good.

- Customize the BBQ Sauce: Try different BBQ sauces for varied flavors. Sweet, smoky, or spicy sauces can change the entire flavor profile of the pizza.
