Follow the directions of the pizza dough you have chosen.
Preheat your oven to 450°F. If you have a pizza stone, place it in the oven to heat up as well.
Place dough in the oven to parr bake according to your doughs directions.
If your chicken isn't already cooked, cook the chicken.
Cook the bacon in a skillet over medium heat until crispy. Alternatively, as mentioned above make perfectly crispy bacon by baking in the oven. Transfer to a paper towel-lined plate to drain, then crumble into pieces.
My little secret to making the best caramelized onions is by cooking it in bacon fat. Using some reserved bacon grease from cooking the bacon, saute the red onion in a skillet until fragrant and caramelized. Set aside.
Once the chicken is cooked, shred or dice it into bite-sized pieces. In the skillet add about 1/4-1/2 cup BBQ sauce. Enough to toss the chicken in. Set aside.
Place a layer of about 1 cup of mozzarella cheese on the pizza crust. Evenly distribute the BBQ chicken, crumbled bacon, and red onion over the mozzarella cheese. Sprinkle the remaining mozzarella cheese and cheddar cheese on top.
Drizzle the remaining BBQ sauce over the pizza in a swirling type pattern.
Lightly brush the exposed edges of the crust with olive oil for a golden-brown finish.
Carefully transfer the assembled pizza using a pizza peel to the preheated oven onto the hot pizza stone.
Bake pizza for 10-12 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
Remove the pizza from the oven and let it cool for a few minutes. Slice, and serve.
