If you like the idea of making your own bread, but feel a bit overwhelmed or intimated? This might be the option for you! You can still make your own bread, but having a bread machine will take a lot of the guess work out of bread making!
Why use a bread machine?
Using a bread machine to make potato flake sourdough loaves can offer several advantages:
Convenience: Typically, when making sourdough, it can take a bit of time to mix, proof, shape, and bake. While most of the time is spent waiting for the dough to rise, it can still be a bit time consuming. A bread machine automates these steps, making it convenient for those with busy schedules or limited time for baking.
Consistency: Bread machines maintain consistent temperatures and mixing speeds throughout the baking process, which helps ensure consistent results with your sourdough every time you bake.
Controlled environment: Sourdough fermentation is sensitive to temperature and humidity variations. Bread machines provide a controlled environment for fermentation, allowing you to set the ideal conditions for your sourdough starter to thrive.
Less Mess: Making sourdough bread by hand can be messy, with flour flying everywhere during kneading and shaping. Using a bread machine reduces the mess since all of the mixing, kneading, and baking are done within the machine’s bowl.
Easier Cleanup: This goes along with making less mess! Bread machines usually have non-stick baking pans that are easy to clean, saving you time and effort in washing up compared to regular bread pans.
Tips For Making Bread Machine Sourdough Bread:
- If you want to make this bread from start to finish and never touch the dough, you totally can! However, you have the option of removing the paddle after the kneading step so that you don’t have to remove the paddle out of your finished bread loaf.
- Spray the top of dough with oil before leaving it to proof. This is to make sure the dough doesn’t dry out on top during rising.
What is the best bread machine for making sourdough bread?
You can use any bread machine to make potato flake sourdough! The only thing that you might need to do is pause or stop the cycle before baking.
Since many bread machines are designed to make yeast bread, they will begin the baking process before the sourdough has had time to rise.
If you don’t already have a bread machine, but are looking to invest in one, you might want to find one that has a sourdough setting to make it easier to make sourdough bread. Here are a couple options that I have found that have a specific sourdough setting. Ingredients:
Water – Preferably filtered.
Oil – I use vegetable oil, but olive oil that doesn’t have a strong flavor, would also be a great option!
Bread flour – Bread flour yields a softer, fluffier bread. All-purpose can be substituted. However, bread flour has a higher protein content, which creates stronger gluten, resulting in better rise and texture.
Sugar – This helps feed the sourdough starter and gives it a slightly sweet flavor.
Salt – Without salt, the bread will be bland and lacking in flavor.
Active potato flake starter – This is starter that has been fed within 4-12 hours and is bubbling and foamy on top.
How to make a loaf of potato flake sourdough in the bread machine:
Start by adding all of the wet ingredients (water, oil, active starter) into the bread machine insert. Make sure that you have the paddle attached before adding any ingredients.
After all of the wet ingredients are added, continue by adding the dry ingredients (bread flour, sugar, salt.)
If you removed the insert to add the ingredients, place it back into the bread machine at this time. Select a cycle on the bread machine that will knead the dough for about 10 minutes.
After it is done kneading you can take the dough out and remove the paddle if you’d like. This will prevent you from having to remove it after it is done baking. Leaving it in is completely fine, but it will leave a hole in the bottom of your bread.
If there is not a sourdough setting, make sure that the machine will not begin to bake after a short rise time. The machine I used needed to be turned off after the 1 hour rise or it would begin baking. I simply turned it off and after the dough had risen for about 8 hours I chose the bake setting. This baked the bread for 1 hour with a medium darkness of crust.
If your machine has a sourdough setting that will keep warm for at least 6 hours, choose this setting!
After it was done baking, I removed the insert, carefully with oven mitts, and allowed it to cool until I could handle it comfortably with my hands.
The bread should easily come out of the bread machine insert. Allow it to fully cool before slicing.

The best potato flake bread recipe for the bread machine
This is the same bread recipe that I use when making bread in the oven, but I have divided the recipe to make just one loaf. I also increased the starter while reducing the water to give it bit more of a boost.
